To make it, heat up two tablespoons of olive oil in a soup pot over medium heat.

Add chopped onion, garlic, celery, zucchini, and green beans and sauté for about 5 minutes or until your onions start to go translucent. Add 4 cups of vegetable broth, half a can of drained tomatoes, 1 can of beans (either great northern beans or small white beans), ½ cup of carrots, and spices.

Bring it all to a boil, then turn down the heat and let it simmer for 20 minutes. Throw in 3 cups of fresh spinach leaves and 1/3 of a cup of your favorite small shell pasta, and let it cook down for 20 minutes.
