All Ruby's locations have iconic diner elements like red vinyl booths, chrome and formica tables, and a soda counter. Some locations go the extra step to recreate a retro vibe, like the Laguna Beach restaurant which has classic/vintage cars on display in front of the store or the Anaheim restaurant, which features a 12-car drive in staffed by roller-skating servers. The origin of Rubi´s Diner. Its first store opened in 1982 in a converted bait shop at the end of Balboa Pier in Newport Beach, California. The Restaurateur Doug Cavanaugh in partnership with Ralph Kosmides and decided to start a 1940’s American diner theme to bring back the fun and nostalgia of the swing era. They named the restaurant after Doug´s mother, Ruby! In recognition, nowadays every Ruby’s Diner location has a picture of Ruby’s high school graduation picture near the cash register.
